Strawberry Cheesecake Rolls (Print Version)

# Ingredients:

→ Filling Mix

01 - 1 cup heavy cream, whipped until stiff
02 - 8 oz softened cream cheese
03 - 1/4 cup white sugar
04 - 1 teaspoon vanilla essence

→ Sweet Strawberry Topping

05 - 1 cup diced fresh strawberries
06 - 2 tablespoons sugar

→ Building the Layers

07 - 6 large thin crepes or cake rounds
08 - 1 1/2 cups crushed graham crackers or shortbread cookies
09 - 1/4 cup melted unsalted butter
10 - Powdered sugar for decoration

# Instructions:

01 - Blend cream cheese, white sugar, and vanilla until creamy. Whip heavy cream separately until fluffy and fold into the cream cheese mixture.
02 - Toss the diced strawberries with sugar and let them sit for around 10 minutes to release their juices.
03 - Stir together crushed cookies with melted butter until it feels like damp crumbs.
04 - Spread a crepe with filling, add crumbs and strawberries, then roll up snugly like sushi.
05 - Wrap rolls in plastic and let them chill for at least 1 hour. Slice into 1-inch sections, then sprinkle powdered sugar on top before digging in.

# Notes:

01 - Chill well before slicing so you get neat pieces.
02 - Either cookie type—shortbread or graham crackers—works for the crunchy layer.
