Gently mix in the Fruity Pebbles cereal and, if using, the white chocolate chips.

Form the dough into small balls and spread them out on the lined baking tray.

Cook for about 8-10 minutes, until the edges are firm and centers stay a little soft.

While still warm, press some extra Fruity Pebbles gently onto the cookie tops.

Let cookies sit for 5 minutes on the tray, then move them to a wire cooling rack. Drizzle white chocolate or sprinkle with rainbow toppings if you'd like before serving.
