Beat together the butter and sugars until creamy and fluffy—just a couple minutes will do. Throw in the vanilla and mix again. Slowly stir in the flour and toss in those chocolate chips to finish.

Shape the dough into a ball, cover it with plastic, and let it chill out in the fridge for at least 30 minutes.

Combine the heavy cream, milk, sugar, and vanilla. Use your ice cream machine to churn it as instructed by the manufacturer.

Once you've got your ice cream done, fold in the cooled cookie dough bits and break up graham crackers to mix in.

On parchment paper, press the ice cream mixture into a rectangle about a half-inch thick. Sprinkle your marshmallows and chocolate chunks on top.

Using the parchment, gently roll the mixture into a log shape. Wrap it up snugly and freeze it for at least 4 hours, or leave it in overnight.
