Stir together masa harina, seasoning, and salt. Pour the hot water in small amounts until it’s like moldable clay. Softened butter should be worked in at the end.

Divide the dough into 12 chunks, making them the size of golf balls. Cover with a wet towel to keep them soft.

Press each dough ball flat, place beans and cheese in the middle, fold the edges up, and gently press into disks about 3 inches wide.

Warm oil on a griddle or pan. Fry each one for about 3 minutes per side until crispy and golden.
