Pink Strawberry Cookies (Print Version)

# Ingredients:

→ Wet Ingredients

01 - 1 large egg, bring it to room temp first
02 - 1 cup (226g) softened butter, unsalted
03 - 1/2 tsp almond extract if you'd like a hint of it
04 - 1 tsp vanilla, because it's classic
05 - 1 cup (200g) sugar, plain old granulated

→ Dry Ingredients

06 - 1 box (3 oz) of strawberry-flavored gelatin powder
07 - 1/4 tsp regular salt
08 - 1 tsp baking powder to help the cookies puff slightly
09 - 2 cups (250g) all-purpose flour from the bag in your pantry

→ Finishing Touches

10 - A few dozen (24-30) chocolate kisses, already unwrapped
11 - A little powdered sugar (1/4 cup) for sprinkling on at the end

# Instructions:

01 - Whip your butter and sugar for a couple of minutes till light and airy. Toss in the egg and your vanilla (and almond extract if you're using it), then mix till everything's smooth.
02 - Pour that strawberry gelatin into the mix and stir it until it transforms into the prettiest pink shade you've ever seen!
03 - In a different bowl, whisk up the flour, the salt, and baking powder. Gradually combine this with your pink dough till it's totally smooth and ready to roll.
04 - Scoop out tablespoon-sized lumps of dough and roll them into balls. Lay them on your prepared baking sheet, and make a small dip in each one using your thumb. That's where your kiss will sit later!
05 - Bake them in a 350°F oven for around 10 to 12 minutes. They'll look lightly set with a bit of soft cracking at the edges when they're ready.
06 - Right after they come out of the oven (while still warm but not blazing hot), gently push a chocolate kiss into the center of each cookie. It'll soften just right without melting everywhere.
07 - When the cookies have cooled off completely, sprinkle a touch of powdered sugar over the top. It gives them a little extra sweetness and charm!
