Whip your butter and sugar for a couple of minutes till light and airy. Toss in the egg and your vanilla (and almond extract if you're using it), then mix till everything's smooth.

Pour that strawberry gelatin into the mix and stir it until it transforms into the prettiest pink shade you've ever seen!

In a different bowl, whisk up the flour, the salt, and baking powder. Gradually combine this with your pink dough till it's totally smooth and ready to roll.

Scoop out tablespoon-sized lumps of dough and roll them into balls. Lay them on your prepared baking sheet, and make a small dip in each one using your thumb. That's where your kiss will sit later!

Bake them in a 350°F oven for around 10 to 12 minutes. They'll look lightly set with a bit of soft cracking at the edges when they're ready.

Right after they come out of the oven (while still warm but not blazing hot), gently push a chocolate kiss into the center of each cookie. It'll soften just right without melting everywhere.
