# Ingredients:

01 - 1 teaspoon dried Italian herbs
02 - 1 cup bread crumbs (seasoned with Italian spices)
03 - ½ cup Parmesan cheese, finely grated
04 - 1 pound fresh or chilled tortellini filled with cheese
05 - 1 cup plain flour, for coating
06 - 2 eggs, large size
07 - 1 teaspoon garlic powder for flavor
08 - Salt and black pepper, as needed
09 - Enough vegetable oil for frying

# Instructions:

01 - Cook tortellini in boiling water as per package instructions until just tender. Drain them well and lightly pat dry with a paper towel.
02 - Get three separate bowls ready: the first with flour, the second with beaten eggs, and the third with a combination of breadcrumbs, Parmesan, and seasonings.
03 - Dip each tortellini into the flour, then the egg mixture, and finish with the breadcrumb mixture. Press gently to make sure the coating sticks.
04 - In a large pan, heat oil until it reaches 350°F. Cook the tortellini in small batches, flipping halfway, and fry for about 2-3 minutes per side until crispy and golden.
05 - Place fried tortellini on paper towels to get rid of extra oil. Sprinkle more Parmesan on top if you'd like, and enjoy them hot with marinara sauce for dipping.

01 - Tastes best while still warm and crunchy.
02 - Chilled or fresh tortellini work better; avoid dried ones.
03 - Reheat leftovers in an oven to make them crispy again.
