Fresh Dinner Rolls (Print Version)

# Ingredients:

01 - 1¼ cups milk, warmed.
02 - 1 (¼-ounce) package active dry yeast, 2¼ teaspoons.
03 - 2 tablespoons sugar.
04 - 5 tablespoons unsalted butter, melted.
05 - 1 teaspoon sea salt.
06 - 3 cups all-purpose flour, spooned and leveled (375g).
07 - Extra-virgin olive oil, for brushing.
08 - 2 tablespoons unsalted butter, melted (for topping).
09 - Sea salt (for topping).

# Instructions:

01 - In stand mixer bowl with dough hook, stir together milk, yeast, and 1 tablespoon sugar. Let proof 5 minutes until foamy. If yeast doesn't foam, start over.
02 - Add remaining sugar, melted butter, and salt. Mix on low. Gradually add flour, mixing until combined. Increase to medium speed, mix 2 minutes until cohesive dough forms.
03 - Knead dough on floured surface to form ball. Place in oiled bowl, cover with plastic wrap, let rise 1-2 hours until doubled.
04 - Brush baking sheet with oil. Divide dough into 15 pieces, roll into balls. Place in pan, dust with flour, cover and let rise 1 hour until puffy.
05 - Preheat oven to 350°F with low rack. Bake 20-25 minutes until golden brown, rotating halfway.
06 - Mix melted butter with pinch of sea salt. Brush over hot rolls and serve warm.

# Notes:

01 - Can be made ahead and refrigerated overnight after shaping.
02 - Can freeze baked rolls after cooling completely.
