Grab a sheet pan, cover it with parchment paper, and leave it nearby.

In a big bowl, beat the peanut butter and softened butter together with a handheld mixer. Slowly mix in powdered sugar and the vanilla if using. Stop to scrape the sides of the bowl so everything blends nicely.

Roll the mixture into balls, about a tablespoon each, and line them up on the pan you prepared. Pop them in the fridge for 20 minutes or more before eating.
