Easy Fast Fish Stew (Print Version)

# Ingredients:

01 - 6 tbsp of good quality olive oil.
02 - 1 medium onion, diced.
03 - 3 big garlic cloves, finely chopped.
04 - 2/3 cup fresh parsley, roughly chopped.
05 - 1 and 1/2 cups fresh tomatoes, chopped, or a 14 oz can.
06 - Around 2 tsp tomato paste if you’d like.
07 - 8 oz bottle of clam liquid.
08 - Half a cup of dry white wine.
09 - 1.5 lbs firm white fish fillets, cut into 2-inch squares.
10 - A small sprinkle of dried oregano.
11 - A tiny pinch of dried thyme.
12 - 1/8 tsp hot sauce like Tabasco.
13 - 1/8 tsp ground black pepper.
14 - 1 tsp table salt.

# Instructions:

01 - Warm up the oil, cook onions for 4 minutes. Toss in the garlic and sauté for another minute. Add parsley last, stirring for about 2 minutes.
02 - Add the tomatoes and tomato paste. Let it cook gently for 10 minutes.
03 - Pour in the wine and clam liquid. Heat it up until it just starts to bubble.
04 - Carefully add the fish chunks. Simmer lightly for 3 to 5 minutes until fish falls apart easily.
05 - Season with oregano, thyme, black pepper, salt, and a bit of Tabasco. Taste and tweak seasoning if needed.

# Notes:

01 - Feel free to toss in shellfish!
02 - Swap out clam liquid for shellfish broth if handy.
03 - It’s great alongside warm, crusty bread.
