Strawberry Cheesecake Bars (Print Version)

# Ingredients:

→ Crust

01 - 1/2 cup melted unsalted butter
02 - 1 1/2 cups graham cracker crumbs

→ Cheesecake Filling

03 - 2 eggs, softened to room temperature
04 - 1/4 cup sour cream
05 - 16 oz cream cheese, brought to room temp
06 - 1/2 cup sugar
07 - 2 tsp vanilla extract

→ Strawberry Compote

08 - 2 tsp cornstarch
09 - 3 Tbsp water
10 - 1/2 Tbsp lemon juice
11 - 5 Tbsp sugar
12 - 1 3/4 cups fresh strawberries, diced

→ Topping

13 - 1/4 cup melted white chocolate

# Instructions:

01 - Set oven to 350°F. Cover a 9x9 pan with parchment, then spray it so nothing sticks later.
02 - Blend melted butter with the graham crumbs. Firmly press the mix into the baking dish using the bottom of a cup.
03 - Mix cream cheese, sugar, sour cream, and vanilla together till smooth. Add eggs one by one, mixing in between.
04 - Pour the creamy filling over your crust. Bake around 40-45 minutes, till the center sets with a slight wiggle and the edges look golden. Let it cool fully.
05 - Combine everything for the compote in a pan. Stir now and then while cooking over medium heat for 10 minutes. Chill it in the fridge.
06 - Slice cool cheesecake into bars. Add a little groove to each one, spoon in the compote, and finish with white chocolate drizzle.

# Notes:

01 - Store in the fridge overnight to prep ahead.
02 - Let ingredients warm up to room temp for easier mixing.
03 - For tidy edges, trim them off if you'd like.
