Cod Coconut Lemon Sauce (Print Version)

# Ingredients:

01 - 600 grams (21 oz) of cod fillets
02 - A pinch of salt, based on your taste
03 - A sprinkle of black pepper, to your liking

→ Creamy Sauce Ingredients

04 - 1 lemon (both juice and zest)
05 - 2 garlic cloves, smashed
06 - 2 tbsp olive oil
07 - 1 slice of medium onion, nice and thin
08 - 300 ml (1.2 cups) of coconut milk
09 - 1 tbsp fresh ginger, grated finely

# Instructions:

01 - Set your oven to 350°F (180°C) and give it time to heat up.
02 - Rub salt and pepper all over the cod so the flavor pops when it's cooked.
03 - In a pan on medium heat, warm olive oil. Toss in the onion slices and cook until they look soft. Mix in the ginger and garlic, letting it cook for a minute. Pour in the coconut milk and let it heat gently. Add the lemon zest and juice, stirring well to blend everything.
04 - Put the seasoned cod in a baking dish, laying them out flat. Pour the creamy lemon sauce over them. Pop the dish in the hot oven and bake for around 20–25 minutes. It's done when the fish splits apart easily with a fork.
05 - Once baked, take the cod out of the oven and serve with a good drizzle of the sauce. Add some rice or greens on the side if you want.

# Notes:

01 - For even cooking, use fish fillets that are all about 1 to 1.5 inches thick. You could also switch out cod for haddock, halibut, or pollock if you prefer.
