Chili Eggs Breakfast (Print Version)

# Ingredients:

01 - 4 slices of crispy bacon.
02 - 1 diced white onion.
03 - 1 diced poblano or bell pepper.
04 - 2 garlic cloves, minced or shredded.
05 - 1 lb raw turkey sausage (breakfast style).
06 - 1 packet of chili seasoning mix.
07 - 1 can (28 oz) crushed tomatoes with fire-roasted flavor.
08 - 3-4 cups of beef broth (use as needed for thickness).

# Instructions:

01 - Start by adding the bacon slices to a Dutch oven or any large pot over medium heat. Cook thoroughly, then take them out and place them on a towel to drain the grease.
02 - Throw in the diced onion and pepper into the leftover bacon grease. Stir for a couple of minutes until they soften a bit, then toss in the minced garlic for about 30 seconds before adding the sausage.
03 - Break up the turkey sausage into smaller pieces and cook it all the way through.
04 - Pour the rest of the ingredients into the pot. Crumble up the bacon and stir it in too. Bring it to a boil, then reduce the heat to a gentle simmer. Cover the pot and let it cook for 45 minutes to an hour before digging in.
