Chili Cheese Dog Casserole (Print Version)

01 - 1 package (8.5 ounces) cornbread or muffin mix
02 - 1 tablespoon olive oil
03 - 1 cup chopped green pepper
04 - 1/2 cup chopped onion
05 - 1/2 cup chopped celery
06 - 1 package (1 pound) hot dogs, halved lengthwise and cut into bite-sized pieces
07 - 1 can (15 ounces) chili with beans
08 - 2 tablespoons brown sugar
09 - 1/2 teaspoon garlic powder
10 - 1/2 teaspoon chili powder
11 - 1 cup shredded cheddar cheese, divided

# Instructions:

01 - Preheat oven to 350°F (175°C). Prepare cornbread batter according to package directions. Spread half of the batter into a greased 8-inch square baking dish.
02 - In a large skillet, heat olive oil over medium heat. Add green pepper, onion, and celery. Cook and stir until crisp-tender, approximately 5-7 minutes.
03 - Stir in the hot dogs and cook until lightly browned, about 3-4 minutes. Add chili, brown sugar, garlic powder, and chili powder. Heat through and stir in 3/4 cup of shredded cheddar cheese.
04 - Spoon the hot dog mixture over the cornbread batter in the dish. Top with the remaining batter and sprinkle with the remaining 1/4 cup cheddar cheese.
05 - Bake the casserole uncovered until a toothpick inserted in the center comes out clean, approximately 28-32 minutes. Let stand for 5 minutes before serving.
