Chicken Pineapple Rice (Print Version)

# Ingredients:

01 - 2 cups chicken broth
02 - 1 pound chicken breast, cut into chunks
03 - 1 onion, diced
04 - 1 cup jasmine rice
05 - 1 cup pineapple, cut into small cubes
06 - 1 red bell pepper, finely chopped
07 - 1 tablespoon soy sauce
08 - 1 tablespoon olive oil
09 - 1 teaspoon freshly grated ginger
10 - 2 cloves garlic, crushed
11 - Season with salt and pepper as desired

12 - 1 tablespoon sesame seeds
13 - ¼ cup finely sliced green onions

# Instructions:

01 - Mix rice, chicken broth, soy sauce, ginger, salt, and pepper in the skillet. Let it boil, then lower the heat, cover it, and cook until the rice is done, about 18-20 minutes.
02 - Put the cooked chicken back into the skillet. Stir everything together so the flavors mix nicely. Heat until warmed through.
03 - Using the same skillet, cook onion, garlic, and red bell pepper till they're soft.
04 - Toss in pineapple chunks and let them cook for a couple of minutes.
05 - Warm olive oil in a big skillet over medium heat and cook the chicken until it's browned. Take it out and set it aside for later.
06 - Before serving, sprinkle on green onions and sesame seeds for extra color and a nice crunch.

# Notes:

01 - Fresh or canned pineapple works equally well.
02 - Use less soy sauce if you want it less salty.
