Mix rice, chicken broth, soy sauce, ginger, salt, and pepper in the skillet. Let it boil, then lower the heat, cover it, and cook until the rice is done, about 18-20 minutes.

Put the cooked chicken back into the skillet. Stir everything together so the flavors mix nicely. Heat until warmed through.

Using the same skillet, cook onion, garlic, and red bell pepper till they're soft.

Toss in pineapple chunks and let them cook for a couple of minutes.

Warm olive oil in a big skillet over medium heat and cook the chicken until it's browned. Take it out and set it aside for later.

Before serving, sprinkle on green onions and sesame seeds for extra color and a nice crunch.
