Chicken Guacamole Melts (Print Version)

# Ingredients:

01 - 1 pound chicken cutlets.
02 - 1 cup pepper jack cheese.
03 - 1 tablespoon olive oil.
04 - 1 tablespoon butter.
05 - 1 avocado.
06 - 1 teaspoon lemon juice.
07 - Salt and pepper.
08 - 1 teaspoon paprika.
09 - Cilantro if you'd like.
10 - 1 plum tomato, diced.
11 - 2 tablespoons onion, diced.
12 - 1/8 teaspoon salt.

# Instructions:

01 - Put olive oil and butter into a big skillet and let butter start bubbling on medium-high stove heat.
02 - Generously cover both sides of cutlets with paprika, salt, and pepper.
03 - Lay seasoned chicken in the pan all at once or in rounds if necessary.
04 - Let the chicken cook undisturbed for 3 to 4 minutes on the first side till it turns golden.
05 - Flip the cutlets and keep cooking for another 3-4 minutes or until they hit 165°F inside.
06 - While the chicken's cooking, smash the avocado and mix in salt and lemon juice in a bowl.
07 - Gently stir chopped tomato, onion, and cilantro (optional) into the mashed avocado.
08 - Turn the heat down low or switch it off when the chicken's done.
09 - Spoon some prepared guacamole onto each piece of chicken.
10 - Evenly sprinkle cheese over the guacamole-covered chicken.
11 - Cover the skillet and let it sit for a couple of minutes so the cheese completely melts.
12 - Serve the chicken while the cheese is gooey and warm.
