Preheat your oven to 200C | 390F.

Wash and cube the potatoes. Add them to a saucepan, cover with water, and bring to the boil. Par-boil the potatoes for 6-8 minutes, then drain and steam dry for 2-3 minutes.

Add the potatoes to your baking dish along with thyme, oregano, salt, pepper, and 2 tbsp olive oil. Stir to coat evenly.

Roast the potatoes for 30-40 minutes until golden, crispy, and almost cooked through.

Add the feta to the middle of the tray, dipping one side in the seasonings before flipping it over. Squeeze over half the lemon.

Remove the garlic from the dish, and once cooled, squeeze the garlic out of its skins and mash with the flat of your knife. Set aside.

Place the dish back in the oven for another 15 minutes.

Stir the mashed garlic mixture and juice of the remaining half lemon into the potatoes along with fresh basil. Gently mix with the baked feta.

Drizzle over the honey, garnish with shredded basil, and serve.
