Chop onion into small wedges and slice into half-inch sections. Cut zucchini into sticks roughly 2-3 inches long and half-inch wide.

Warm vegetable oil over medium-high heat until it starts to shimmer in a sauté pan or wok.

Sauté onion until it softens, for a couple of minutes. Add ginger and garlic, then stir for about 30 seconds.

Toss in zucchini sticks and stir now and then for 4-5 minutes, letting them get some color.

Drizzle soy sauce and sesame oil over veggies. Sprinkle salt, pepper, and sesame seeds. Cook just a minute longer till everything’s crisp-tender.
