Spicy Garlic Bok Choy

# Ingredients:

½ cup ricotta, low fat

2 medium-sized zucchinis

1 teaspoon garlic, minced

½ cup mushrooms, sliced

Cooking spray or oil spray

2 cups fresh spinach or ¼ cup frozen

Spices as you like
# Instructions:

Cook mushrooms in a sprayed pan. Toss spinach and garlic in at the end, heating for just a few minutes.

Turn off the heat and crumble in the ricotta, stirring to combine.

Halve the zucchini lengthwise and hollow out the centers by scooping the seeds.
04 -
Load zucchini with the spinach-mushroom-filling mix. Bake at 350°F for 6-8 minutes.
