Spicy Garlic Bok Choy (Print Version)

# Ingredients:

01 - ½ cup ricotta, low fat
02 - 2 medium-sized zucchinis
03 - 1 teaspoon garlic, minced
04 - ½ cup mushrooms, sliced
05 - Cooking spray or oil spray
06 - 2 cups fresh spinach or ¼ cup frozen
07 - Spices as you like

# Instructions:

01 - Cook mushrooms in a sprayed pan. Toss spinach and garlic in at the end, heating for just a few minutes.
02 - Turn off the heat and crumble in the ricotta, stirring to combine.
03 - Halve the zucchini lengthwise and hollow out the centers by scooping the seeds.
04 - Load zucchini with the spinach-mushroom-filling mix. Bake at 350°F for 6-8 minutes.
