Warm Apple Pudding (Print Version)

# Ingredients:

01 - 1 teaspoon ground cinnamon
02 - 1/4 teaspoon salt
03 - 1 teaspoon vanilla extract
04 - 1/2 cup light brown sugar (for filling)
05 - 4 tablespoons unsalted butter (for filling)
06 - 3 large apples, peeled and chopped into 1/2-inch pieces
07 - 1 pound brioche or challah bread, diced into 1-inch squares

→ Custard

08 - 2 1/2 cups full-fat milk
09 - 1/2 cup granulated sugar
10 - 4 large eggs

→ Bourbon Sauce

11 - 1/4 cup heavy cream
12 - 3 tablespoons bourbon
13 - 1 cup light brown sugar
14 - 1/2 cup unsalted butter

# Instructions:

01 - Set your oven to 350°F. Toss bread cubes on a sheet pan and bake for 10 minutes, or until lightly crisp.
02 - Mix the apples with butter, brown sugar, cinnamon, vanilla, and salt. Cook until they soften in about 5 minutes.
03 - In a bowl, whisk the eggs, sugar, and milk together until smooth.
04 - Grease a 9x13-inch dish. Combine toasted bread cubes with apple mixture, then pour custard on top. Let it soak for 15 minutes.
05 - Pop it into the oven and bake for 40 minutes, or until a knife inserted in the middle comes out clean and the top is golden brown.
06 - Melt the butter with brown sugar. Stir in the cream and cook for 2 minutes. Add bourbon and simmer for 1 minute.

# Notes:

01 - Stale bread works fine and skips toasting.
02 - Keep the sauce and pudding stored separately.
03 - It can be made in advance and heated later.
