# Ingredients:

01 - 1 teaspoon vanilla extract

03 - ¾ cup pink dragon fruit puree
04 - 1 ½ teaspoons baking powder
05 - ½ cup milk
06 - 2 cups all-purpose flour, sifted
07 - 1 cup sugar
08 - ½ teaspoon baking soda
09 - ½ cup unsalted butter, softened

10 - ½ teaspoon vanilla extract
11 - 2 tablespoons pink dragon fruit puree
12 - 1–2 tablespoons heavy cream (optional)
13 - 3 cups powdered sugar
14 - 1 cup unsalted butter, softened

# Instructions:

01 - Get your oven warming up to 175°C (350°F). Line and grease two 8-inch round pans with parchment paper.
02 - Grab a medium bowl and mix the flour, baking soda, and baking powder together with a whisk. Set it aside.
03 - Take a large bowl and blend the softened butter with sugar using a mixer on high speed for 2–3 minutes until the mix turns fluffy.
04 - Drop in one egg at a time, beating after each. Stir in the vanilla extract and keep mixing.
05 - Mix in the dragon fruit puree, then start alternating between the dry ingredients and milk. Begin and finish with the flour mix, stirring just until it's all combined.
06 - Pour the batter evenly into the pans. Pop them in the oven and bake for 25–30 minutes. They're ready when a toothpick you poke in the center comes out clean. Let the cakes cool on a rack.
07 - Use a large bowl to beat the butter until creamy. Gradually add powdered sugar and mix it in. Stir in the dragon fruit puree, vanilla extract, and heavy cream if needed for a smooth spread.
08 - Put one cake layer on a plate and add a thick layer of frosting on top. Place the second layer on top and frost the whole thing evenly.
09 - Top with slices of fresh dragon fruit, berries, some edible flowers, or sprinkle dragon fruit seeds for extra flair.

01 - Chill your bowls and beaters before using to make the butter and cream easier to whip.
02 - To brighten a dull-colored dragon fruit, mix in a tiny drop of pink food dye.
03 - Dry out thawed frozen dragon fruit before using it, so your batter stays the right texture.
