Set your oven to 180°C. Prep your donut pan with some oil. Stir vinegar into almond milk, and let it rest for about 5 minutes.

Combine baking powder, flour, baking soda, salt, and matcha in a bowl. Stir in your sugar afterward.

Mix the almond milk and vinegar combo with coconut oil and vanilla.

Scoop or pipe the batter into the wells of the pan, filling them about 3/4 of the way.

Add the wet mix into the dry and stir gently until it just comes together. It'll feel pretty thick.

Bake for 10-12 minutes. To check, poke a skewer in one, and if it comes out clean, they're done.

Blend the powdered sugar with matcha, almond milk, and a bit of oil until there aren't any lumps.

Dip the donuts in the glaze, then sprinkle toppings over them quickly before it sets.
