Tuna Cakes Sriracha (Print Version)

# Ingredients:

→ Tuna Cakes

01 - 2 cans of tuna (5 oz each), make sure to drain them well
02 - 1 egg, lightly beaten
03 - 1/2 cup breadcrumbs or Trader Joe's rice crumbs
04 - 1-2 tbsp olive oil for cooking
05 - Pinch of umami seasoning if you like, optional
06 - 2 tbsp mayo
07 - 1 tbsp sriracha sauce
08 - 1 clove garlic, finely chopped
09 - Salt and pepper for seasoning, to taste
10 - 1 tbsp green onions, sliced small
11 - 2 mini red sweet peppers, finely diced (you can sub with half a red bell pepper)

→ Spicy Tartar

12 - 1/4 cup mayonnaise
13 - 2 tbsp sriracha (adjust to your preferred spice level)
14 - 1/4 cup relish made from dill pickles
15 - A pinch of ground ginger, optional
16 - Salt and pepper, to your liking

# Instructions:

01 - Mix the tartar ingredients together in a small bowl. Cover it up and put it in the fridge until you're ready to use.
02 - In a medium bowl, toss in the drained tuna and fluff it up with a fork before whisking in the egg.
03 - Add to the bowl the breadcrumbs, mayo, sriracha, garlic, and umami seasoning (optional). Sprinkle in some salt and pepper based on taste and, if needed, skip the extra salt if your tuna's already quite salty. Fold in peppers and green onion to finish it off.
04 - Use about 1/3 cup of the mixture for each patty. Roll it into a ball first, then gently press it flat to make 5 patties. Works best with wet hands!
05 - Heat some olive oil in a big skillet set to medium-high. When it's hot enough, place the patties carefully in the pan. Let them cook roughly 3 or 4 minutes each side, flipping them gently, until they're golden and warm all the way through.
06 - Pair your tuna patties with the spicy tartar sauce and dig in!

# Notes:

01 - You can prep the tuna cakes a few hours ahead. Just keep them cool on a plate or board in the fridge, then fry when you're ready.
02 - Whip up the tartar sauce a day or two in advance. Keep it chilled and covered in the fridge. Bring it out to room temp before serving for max flavor.
03 - Air fry tip: Spray your air fryer basket lightly. Place patties in without crowding the space, brushing a bit of oil on each one. Fry at 360°F for 5 minutes. Flip them and go for another 3-4 minutes until crispy and cooked through.
04 - Serve these patties with a side of sesame cucumber salad, some cauliflower rice, or roasted brussels sprouts to make a full meal.
