Tiramisu Truffles (Print Version)

# Ingredients:

01 - 1/4 teaspoon of vanilla extract.
02 - 8 ounces mascarpone cheese.
03 - 1/2 cup unsweetened cocoa powder.
04 - 1 1/2 cups crumbled ladyfingers.
05 - 1/2 cup mini chocolate chips.
06 - 1 tablespoon of espresso powder.
07 - 1/4 cup confectioners' sugar.

# Instructions:

01 - Blend mascarpone, cookie crumbs, sugar, espresso, and vanilla till it feels creamy.
02 - Scoop out tablespoons of mixture, roll into spheres, and pop in the fridge for half an hour.
03 - Use short microwave intervals to melt chocolate, stirring often to keep it smooth.
04 - Coat spheres with melted chocolate or roll them in the cocoa powder.
05 - Sprinkle with a dash of cocoa for looks. Let sit in the fridge for 15 minutes.

01 - Chill more if mixture feels soft.
02 - Stays fresh in the fridge for up to a week.
03 - Vanilla wafer cookies work too.
