Thai Peanut Spicy Noodles (Print Version)

# Ingredients:

→ Noodles

01 - 8 oz of rice noodles

→ Sauce

02 - A quarter cup smooth or chunky peanut butter
03 - 2 tbsp soy sauce
04 - 1 tbsp fresh lime juice
05 - 1 tbsp of honey
06 - 1 tsp hot sriracha sauce
07 - 1 tbsp toasted sesame oil
08 - 1 minced clove of garlic
09 - A quarter cup warm water

→ Garnish

10 - A quarter cup sliced green onions
11 - Chopped peanuts
12 - Optional cilantro leaves

# Instructions:

01 - Boil the rice noodles following the package instructions, drain them well, then set aside.
02 - Combine the peanut butter with soy sauce, lime juice, honey, sriracha, sesame oil, garlic, and warm water. Stir until smooth.
03 - Mix the noodles and sauce together until every strand is coated.
04 - Scatter green onions, chopped peanuts, and optional cilantro on top. Enjoy right away.

# Notes:

01 - Keep leftovers in the fridge for up to 2-3 days
02 - Reheat with a splash of water or soy sauce to get the creamy texture back
03 - Dial up or down on sriracha to make it more or less spicy
