In a small pan, cook the minced beef over medium heat until it's browned all over. Drain any grease, then mix in taco seasoning and 1/4 cup water. Let it simmer until the liquid dries up, around 1-2 minutes.

Use a bowl to combine sour cream, cream cheese, and the seasoned beef. Smash it all together with a fork until blended. Adjust with a pinch of salt if you want.

Take the filling and divide it between the two tortillas, spreading it out evenly. Sprinkle cheddar cheese over the top.

Roll each tortilla up tightly. Use a sharp knife to trim the ends, then slice each roll into 5 evenly sized pieces.

Layer the pinwheels flat in the air fryer basket, avoiding overlapping. Cook at 190°C for 5 minutes. Use baking paper if you'd like to keep them from sticking.
