Set oven to 350°F and cover a tray with parchment paper.

Blend sugar and butter until creamy. Add flour after stirring in the vanilla.

Flatten dough to 1/4 inch, spread preserves, then roll it into a log shape.

Place the log in the fridge for half an hour so it hardens up.
