Sugar Cream Indiana Pie (Print Version)

# Ingredients:

→ Crust Ingredients

01 - 2-4 tablespoons ice water
02 - 2 tablespoons vodka
03 - ½ cup cold unsalted butter
04 - ½ teaspoon salt
05 - 1⅓ cups plain flour
06 - 2 tablespoons light brown sugar

→ Filling Ingredients

07 - 1 cup whipping cream
08 - pinch of ground nutmeg
09 - 4 tablespoons unsalted butter
10 - 1 cup half-and-half
11 - 2 teaspoons vanilla extract
12 - ½ teaspoon cinnamon powder
13 - ¾ cup white sugar
14 - ¼ cup cornstarch

# Instructions:

01 - Whirl together flour, sugar, salt, and chilled butter in a food processor. Mix in ice water and vodka until dough clumps. Let it chill for 2 hours.
02 - Roll dough out, put it into a pie pan, pinch edges, and poke the base. Chill for half an hour. Weight it down and bake at 375°F for 15 minutes.
03 - Mix sugar, starch, half-and-half, cream, and butter. Heat until bubbly and thick. Stir in the vanilla extract.
04 - Spread the filling in the shell, top with cinnamon and nutmeg. Bake at 375°F for 15-20 minutes or until it's golden.
05 - Let the pie cool for half an hour on a rack and then refrigerate for 2-3 hours before serving.
