Turn your oven to 325°F (160°C). Coat a 9-inch springform pan lightly with grease. Combine crushed cookies with butter, press firmly into the bottom of the pan, and bake for about 8-10 minutes until golden. Let it cool down.

Mix cream cheese and sugar until smooth using a mixer. Add eggs slowly, one by one, and mix fully before adding the next. Stir in vanilla and sour cream, then gently fold in the sprinkles without stirring too much.

Pour the batter over the cooled crust. Bake for 50-60 minutes—remove when the center is still a bit wobbly. Turn off the oven, leave the door slightly open, and let it rest for an hour.

Take the cheesecake out and let it cool to room temp. Chill in the fridge for a minimum of 4 hours, or leave overnight for best results.
