# Ingredients:

→ Steak Marinade

01 - 1 ½ tablespoons oyster sauce
02 - 2 tablespoons neutral oil
03 - 2 tablespoons soy sauce
04 - 1 tablespoon lime juice
05 - 2 teaspoons sugar
06 - ½ teaspoon black peppercorns
07 - 2 cloves garlic
08 - 1.5 lb flatiron, skirt, hanger, or flank steaks (thinly cut)
09 - Sticky rice, optional for serving

→ Spicy Dipping Sauce

10 - 1 tablespoon lime juice
11 - 2 tablespoons tamarind paste
12 - 1 tablespoon fish sauce
13 - 1 tablespoon palm sugar, finely chopped
14 - ½ teaspoon chili flakes, toasted (adjust the heat as you like)
15 - 2 tablespoons sliced green onion or minced shallots
16 - 3 sprigs chopped mint or cilantro
17 - 1 tablespoon jasmine or sticky rice, uncooked (to toast and grind)

# Instructions:

01 - Crush the black pepper with a mortar and pestle until it's like a powder. Toss in the garlic and smash into a smooth paste. In a bowl, stir it with soy sauce, oyster sauce, sugar, lime juice, and oil until well blended.
02 - Put the steaks inside a freezer bag or dish. Pour the marinade on them, making sure they're all covered. Let them sit in the fridge for at least 3 hours or even overnight. Take the steaks out an hour beforehand to warm up before grilling.
03 - Cook the steak on a hot grill with the lid open, flipping it until it’s done the way you like. Don’t cook in a pan for too long since the sugar in the marinade could burn quickly.
04 - In a bowl, mix tamarind paste, fish sauce, lime juice, and palm sugar. Stir until the sugar almost completely dissolves. Add the green onions and chili flakes, setting it aside.
05 - Heat a dry pan over medium-high and toast the jasmine or sticky rice while stirring non-stop until it's deep brown. Let it cool, then grind it into a mostly fine powder with a coffee grinder or mortar and pestle.
06 - Give the reserved sauce another stir to dissolve the sugars completely. Right before serving, toss in the toasted rice powder and chopped cilantro or mint.
07 - Cut the cooked steak into thin slices and serve with the dipping sauce. If you'd like, pair it with some sticky rice or other sides.

# Notes:

01 - Steaks with sugary marinades work best on a grill. If you’re using a pan, sear quickly and finish in the oven on a rack to avoid burning.
