Steak Garlic Butter Bites (Print Version)

# Ingredients:

01 - 1 lb sirloin steak, chopped into 1/2-inch pieces.
02 - 1/4 teaspoon black pepper, or more if you'd like.
03 - 1/2 teaspoon sea salt, with extra if needed.
04 - 1/2 teaspoon dried oregano.
05 - 1 teaspoon dried thyme.
06 - 3 garlic cloves, finely chopped.
07 - 1 lb Yukon gold potatoes, diced into 1/2-inch chunks.
08 - 1 tablespoon olive oil.
09 - 1/4 cup butter or ghee, split into portions.

# Instructions:

01 - Place a cast iron skillet on medium heat. Toss in olive oil and 2 tablespoons of the butter.
02 - Throw in the potatoes, garlic, thyme, oregano, salt, and pepper. Stir every minute or two and let them cook for 8-10 minutes until soft and golden.
03 - Move the cooked potatoes out of the pan and keep them on the side.
04 - Crank the heat up to medium-high, add the last bit of butter, and toss in the steak. Let it sit untouched for 2 minutes to brown before stirring.
05 - Pop the potatoes back in the skillet with the steak, mix well, adjust seasoning to your taste, and dish it up.

# Notes:

01 - Dice the potatoes evenly to ensure even cooking.
02 - Give the steak a chance to brown before you stir it.
03 - Any small potato will work fine if you don't have Yukon golds.
