Spinach Mushroom Creamy Dish (Print Version)

# Ingredients:

01 - 8 oz of crimini mushrooms.
02 - 16 oz of gnocchi made with potatoes.
03 - 1 tablespoon of olive oil.
04 - 1 cup of heavy cream.
05 - 4 garlic cloves, finely chopped.
06 - 1/2 teaspoon of Herbs from Provence or Italian seasoning.
07 - 1/2 cup of chicken stock.
08 - 5 oz of fresh spinach leaves.
09 - 1/2 teaspoon of smoky paprika.
10 - Season with 1/4 teaspoon of salt (or to taste).
11 - Add black pepper to taste.
12 - Sprinkle with red pepper flakes as desired.

# Instructions:

01 - In a big, sturdy skillet, warm up 1 tablespoon of olive oil. Over high heat, toss in the mushrooms (season them with pepper and salt), and cook for a minute or two until they soften and take on a golden color. Scoop out half of the mushrooms and set them aside on a plate.
02 - Drop the uncooked gnocchi into the same skillet with the remaining mushrooms. Include the chicken stock, heavy cream, garlic, smoked paprika, your choice of Italian herbs, and 1/4 teaspoon of salt.
03 - Pop the lid on the skillet, stir well, and let everything bubble up over medium heat. Keep it cooking for about 5 minutes until it starts to thicken.
04 - Stir in the fresh spinach and keep heating on medium. Mix often for about 5 minutes, or until the spinach wilts down to how you like it. Let it simmer longer for a richer, thicker sauce.
05 - Season everything with additional smoked paprika, salt, black pepper, or a sprinkle of red pepper flakes if you’d like. Spread the reserved half of the mushrooms on top.
