Smoked Sausage Potatoes Skillet (Print Version)

# Ingredients:

01 - 1 lb smoked sausage, sliced into rounds
02 - 4 medium russet potatoes, diced
03 - 1 small onion, chopped
04 - 1 red bell pepper, chopped
05 - 2 cloves garlic, minced
06 - 2 tbsp olive oil
07 - 1 tsp smoked paprika
08 - 1/2 tsp garlic powder
09 - Salt and pepper to taste
10 - 2 tbsp fresh parsley, chopped (for garnish)
11 - Optional: shredded cheddar cheese or hot sauce for serving

# Instructions:

01 - In a large skillet, heat 1 tbsp of olive oil over medium heat. Add the diced potatoes, season with salt, pepper, smoked paprika, and garlic powder. Cook for 10-12 minutes, stirring occasionally, until the potatoes are golden brown and tender. Remove the potatoes from the skillet and set aside.
02 - In the same skillet, add the remaining 1 tbsp of olive oil. Add the smoked sausage slices and cook for 3-4 minutes until browned. Add the chopped onion, red bell pepper, and minced garlic. Cook for an additional 5-7 minutes until the vegetables are softened and slightly caramelized.
03 - Return the cooked potatoes to the skillet and stir everything together. Cook for another 2-3 minutes until everything is heated through and the flavors have melded.
04 - Garnish with fresh parsley and serve hot. For extra flavor, top with shredded cheese or a drizzle of hot sauce if desired.
