Shrimp Quesadillas (Print Version)

# Ingredients:

01 - 1 pound uncooked medium shrimp, peeled and deveined.
02 - 1 tablespoon olive oil.
03 - 1/2 cup onion, chopped.
04 - 1/2 cup bell pepper, chopped.
05 - 2 cloves garlic, minced.
06 - 2 tablespoons taco seasoning or 1 tablespoon chili powder and 1/2 teaspoon each garlic powder, onion powder, dried oregano, paprika, ground cumin, salt, black pepper.
07 - 1-2 cups melting cheese (mozzarella, cheddar, Mexican blend, or Monterey Jack).
08 - 6-8 medium flour tortillas.

# Instructions:

01 - Heat olive oil in large skillet over medium heat. Add onion, bell pepper, and garlic. Sauté for 1 minute until tender and fragrant.
02 - Add shrimp and taco seasoning. Cook 1-2 minutes until shrimp turn pink and are cooked through.
03 - Transfer shrimp mixture to bowl. Clean skillet with paper towel and return to heat. Coat lightly with cooking spray or oil.
04 - Place tortilla in skillet. Add cheese on one half, top with 5-6 shrimp, add more cheese and fold tortilla.
05 - Cook 2-3 minutes per side until golden and crispy with melted cheese. Repeat with remaining tortillas.
06 - Serve hot with sour cream, salsa, or guacamole for dipping.

# Notes:

01 - For spicier version, add hot sauce or jalapeños.
02 - Can use whole wheat tortillas.
03 - Can make ahead and reheat in oven.
