Preheat the oven to 350°F (175°C).

In a small bowl, beat the eggs and reserve 2 tablespoons for brushing later.

Scramble the remaining eggs in a skillet over medium heat until fully cooked.

Unroll the crescent roll dough on a clean, flat work surface and separate into 8 triangles.

Cut each slice of cheddar cheese in half and place one piece on each triangle. Add a spoonful of scrambled eggs and top with one sausage link per triangle.

Loosely roll up each triangle starting from the widest end and place them seam-side down on an ungreased cookie sheet.

Brush the tops with the reserved beaten eggs and sprinkle with salt and ground black pepper.

Bake the roll-ups in the preheated oven for 15 to 18 minutes or until golden brown.
