Cajun Sausage Rice Skillet (Print Version)

# Ingredients:

01 - 1 green bell pepper, diced
02 - 1½ cups chicken broth
03 - 3 cloves garlic, minced
04 - Salt and pepper as you like
05 - 12 ounces kielbasa or andouille sausage, sliced into thick rounds
06 - 1 tablespoon olive oil
07 - 1 red bell pepper, diced
08 - 2 tablespoons Cajun spice mix
09 - 1 medium yellow onion, diced
10 - 1 cup white rice with long grains, rinsed clean

11 - Chopped green onions
12 - Fresh parsley leaves
13 - Hot sauce of your choice

# Instructions:

01 - Chop onion and bell peppers, mince garlic, and slice the sausage into chunky rounds. Rinse the rice until the water's clear.
02 - Warm olive oil in a large pan over medium heat. Toss in sausage and cook for about 5 minutes until nice and browned. Set aside.
03 - Using the same pan, soften onion and bell peppers by cooking for around 3 minutes. Add garlic and stir for another minute.
04 - Stir the rinsed rice into the vegetables and oil. Let it toast for a couple of minutes, giving a stir now and then for aroma.
05 - Pour in chicken broth and the Cajun seasoning. Mix well, let it boil, then drop the heat to low. Cover and let it cook for 15-20 minutes until the liquid's gone and rice is soft.
06 - Add the sausage back into the pan. Stir everything up and let it cook for a few more minutes so the flavors blend nicely.
07 - Top with fresh parsley, green onions, or a splash of hot sauce if you'd like. Serve while hot and ready to go.
