Favorite Royal Icing (Print Version)

# Ingredients:

01 - 3 Tablespoons of meringue powder.
02 - 4 cups (480g) sifted powdered sugar.
03 - 9-10 Tablespoons of room temperature water.
04 - Gel food coloring (if you want).

# Instructions:

01 - In a big bowl, toss in the powdered sugar, meringue powder, and 9 Tablespoons of water.
02 - Crank up your hand or stand mixer (use the whisk attachment) to high and whip the mix for 1.5 to 2 minutes. When you lift the whisk, the icing should drizzle smoothly within 5-10 seconds.
03 - Too thick? Stir in one more Tablespoon of water at a time. Too thin? Beat it longer to add air, or sprinkle in extra sifted powdered sugar.
04 - Spread the icing on cookies. A thin layer dries all the way in about 2 hours at room temp.

# Notes:

01 - Keep a damp paper towel over the icing bowl when not in use so it doesn't dry out.
02 - Want some flavor? Add 1/2 teaspoon of your favorite extract.
03 - Putting decorated cookies in the fridge speeds up the drying process.
