Onion Cheese Meatballs (Print Version)

# Ingredients:

01 - 4 medium or 2 large yellow onions, roughly 2 pounds.
02 - A handful of fresh thyme sprigs.
03 - 2 minced garlic cloves.
04 - 6 ounces of grated Gruyère cheese.
05 - Half a cup of panko crumbs.
06 - Half a cup of 2% or whole milk.
07 - 1 big egg.
08 - 2 teaspoons of Worcestershire sauce.
09 - 2 1/2 teaspoons of kosher salt.
10 - 3/4 teaspoon freshly ground black pepper.
11 - 1.5 pounds ground beef.
12 - 2 tablespoons of plain butter.
13 - 2 tablespoons of flour (all-purpose).
14 - Half a cup of dry white wine.
15 - 14.5 ounces of beef stock.
16 - 1 teaspoon of balsamic or sherry vinegar.

# Instructions:

01 - Adjust the racks to the upper and middle slots. Preheat to 400°F and prep a baking tray with parchment paper.
02 - Stir the garlic, thyme, breadcrumbs, cheese, milk, egg, Worcestershire, and spices together. Add the beef and gently work it all in. Shape 32-34 meatballs.
03 - Put meatballs on the tray. Bake about 15-20 minutes until cooked through (center hits 165°F).
04 - Sauté sliced onions with the thyme and seasoning in melted butter until they turn a rich golden shade. Stir in the flour, then pour in the white wine and cook it off.
05 - Add beef broth and simmer until it thickens up. Stir in vinegar and tweak the seasoning as needed.
06 - Drop meatballs into the thick sauce, sprinkle with cheese, and broil for 3-4 minutes till bubbly. Sprinkle some thyme on top for a nice finish.
