Triple Layer Neapolitan Cake (Print Version)

# Ingredients:

→ Vanilla Cake Base

01 - 230 grams (1 cup) unsalted butter, room temperature
02 - 200 grams (1 cup) caster sugar or granulated sugar
03 - 2 teaspoons vanilla extract
04 - 3 large eggs, room temperature
05 - 315 grams (2 1/4 cups) plain flour or all purpose flour
06 - 3 teaspoons baking powder
07 - 1/4 teaspoon salt
08 - 240 ml (1 cup) full fat milk
09 - 2 tablespoons full fat sour cream

→ Strawberry Layer

10 - 1 teaspoon strawberry extract
11 - Pink food gel or food coloring

→ Chocolate Layer

12 - 1 tablespoon cocoa powder, sifted
13 - 1 tablespoon milk

→ Vanilla Buttercream

14 - 230 grams (1 cup) butter, room temperature
15 - 2 teaspoons vanilla extract or vanilla bean paste
16 - 625 grams (5 cups) icing sugar or powdered sugar
17 - 3-4 tablespoons full fat milk, room temperature

→ Decoration

18 - Assorted candies and chocolates (milk chocolate, white chocolate, Smarties, mini M&M's, Freckles)

# Instructions:

01 - Grease and line three 6-inch round baking pans. Preheat oven to 180°C (350°F) standard or 160°C (320°F) fan-forced
02 - Beat butter, sugar and vanilla until creamy. Add eggs one at a time. Sift in dry ingredients, add milk and sour cream, mix until just combined
03 - Divide batter into three parts. Add strawberry extract and pink coloring to one, cocoa powder and milk to another, leave the third plain
04 - Pour batters into prepared pans. Bake for 30 minutes or until done. Cool on wire rack
05 - Beat butter until creamy, add vanilla. Gradually add icing sugar and milk until smooth and creamy
06 - Level cakes with a serrated knife. Stack layers with buttercream between each
07 - Cover entire cake with buttercream, smoothing sides with a cake scraper
08 - Top cake with assorted candies and chocolates
