Monte Cristo Bennigans (Print Version)

# Ingredients:

→ Sandwich

01 - 3 slices Swiss cheese
02 - 9 slices thick-cut roasted turkey
03 - 9 slices honey wheat bread
04 - 9 slices thick-cut honey ham
05 - 3 slices mild cheddar cheese

→ Batter

06 - 2 large eggs, beaten
07 - 2 tablespoons baking powder
08 - 3 cups (375g) all-purpose flour
09 - 2⅔ cups water
10 - ½ teaspoon kosher salt
11 - Vegetable or canola oil, for deep frying
12 - ½ cup (62.5g) confectioners' sugar

→ Dipping Sauce

13 - Honey mustard, if you'd like
14 - Red raspberry preserves

# Instructions:

01 - Stack bread slices with turkey and Swiss, top with another bread slice, add ham and cheddar, then finish with a final bread slice. Slice into triangles, wrap tightly, and chill for a couple of hours.
02 - In one bowl, whisk the dry stuff (flour, baking powder, salt). In another, beat eggs with water. Stir them all together until silky.
03 - Pour around 2 inches of oil into a big pot and heat it up to 325-350°F.
04 - Each sandwich half gets dipped into the batter, then fried until golden, which should take 4-5 minutes. Drain the excess oil on paper towels.
05 - Sprinkle a bit of powdered sugar over the top and serve with raspberry preserves or some honey mustard on the side.

# Notes:

01 - Using pancake mix instead of making batter works too.
02 - Chilling helps hold things together while frying.
