Melt the butter, cream, and chocolate together. Stir it till smooth, let it chill covered for about 1-2 hours. Shape into 8 balls and pop them back in the fridge.

In a microwave-friendly bowl, combine rice flour, sugar, cornstarch, and cocoa. Pour in the milk and whisk until it's all blended.

Microwave the covered bowl for 2 mins. Give it a stir. Zap it again for 2 more minutes until it's glossy and stretchy. Stir in the oil, then knead it till it feels soft.

Split the dough into 8 pieces. Flatten each one, pop a chocolate ball in the middle, and wrap the dough around it. Pinch the edges to close it up.

Toss each filled piece into a bowl of cocoa powder until fully covered.
