Chocolate Mochi Ganache (Print Version)

# Ingredients:

→ Mochi Dough

01 - 1 tbsp cooking oil
02 - 1 cup (240ml) whole milk
03 - 2 tbsp (15g) unsweetened cocoa powder
04 - 2 tbsp (15g) cornstarch
05 - 1 cup (150g) sticky rice flour
06 - 1/4 cup (48g) white sugar

→ Chocolate Filling

07 - 7.9oz (225g) chopped semi-sweet chocolate
08 - 2 tbsp (30g) butter
09 - 1/2 cup (120ml) heavy cream

→ For Coating

10 - 1/2 cup (60g) unsweetened cocoa powder

# Instructions:

01 - Melt the butter, cream, and chocolate together. Stir it till smooth, let it chill covered for about 1-2 hours. Shape into 8 balls and pop them back in the fridge.
02 - In a microwave-friendly bowl, combine rice flour, sugar, cornstarch, and cocoa. Pour in the milk and whisk until it's all blended.
03 - Microwave the covered bowl for 2 mins. Give it a stir. Zap it again for 2 more minutes until it's glossy and stretchy. Stir in the oil, then knead it till it feels soft.
04 - Split the dough into 8 pieces. Flatten each one, pop a chocolate ball in the middle, and wrap the dough around it. Pinch the edges to close it up.
05 - Toss each filled piece into a bowl of cocoa powder until fully covered.
