Mexican Street Tacos Guacamole (Print Version)

# Ingredients:

→ Beef for Tacos

01 - 1 lb beef chuck roast or skirt steak, thinly sliced or shredded
02 - 1 tbsp vegetable oil
03 - 1 small onion, finely chopped
04 - 2 cloves garlic, minced
05 - 1 tsp ground cumin
06 - 1 tsp chili powder
07 - 1/2 tsp smoked paprika
08 - Salt and pepper to taste

→ Guacamole

09 - 2 ripe avocados, mashed
10 - 1/4 cup diced tomato
11 - 1/4 cup diced onion
12 - 1 tbsp chopped cilantro
13 - Juice of 1 lime
14 - Salt to taste

→ Pico de Gallo (Optional)

15 - 1/2 cup diced tomatoes
16 - 1/4 cup diced onion
17 - 1 tbsp chopped cilantro
18 - Juice of 1/2 lime
19 - Salt to taste

→ For Assembly

20 - Small corn or flour tortillas, warmed
21 - Fresh cilantro leaves, for garnish
22 - Lime wedges, for serving

# Instructions:

01 - In a skillet over medium heat, heat the vegetable oil. Add the chopped onion and cook until softened, then add the minced garlic and cook for another minute. Add the sliced or shredded beef, and season with cumin, chili powder, smoked paprika, salt, and pepper. Cook until the beef is browned and fully cooked, then set aside.
02 - In a bowl, combine the mashed avocados, diced tomato, diced onion, chopped cilantro, lime juice, and salt. Mix until well combined and adjust seasoning to taste.
03 - In a small bowl, combine the diced tomatoes, diced onion, chopped cilantro, lime juice, and salt. Stir to mix well.
04 - Place a generous portion of beef onto each warmed tortilla. Top with a scoop of guacamole and, if desired, add a spoonful of pico de gallo. Garnish with fresh cilantro leaves and serve with lime wedges on the side.
