Mexican Picadillo (Print Version)

# Ingredients:

01 - 1 pound ground beef.
02 - 2 cloves garlic, minced.
03 - 1 jalapeno pepper, diced.
04 - 1 serrano pepper, diced (optional).
05 - 8 ounces yellow potatoes (3-4 small), diced.
06 - 1 medium yellow onion, chopped.
07 - 1 tablespoon olive oil.
08 - 3/4 cup beef broth.
09 - 2 large tomatoes, diced.
10 - 1 tablespoon ground paprika.
11 - 1 tablespoon dried Mexican oregano.
12 - 1 teaspoon ground cumin.
13 - Salt and black pepper, to taste.
14 - For serving: Warmed tortillas or cooked rice, chili flakes, lime wedges, hot sauce, sliced peppers.

# Instructions:

01 - Turn on the heat to medium and pour in the oil. Toss in the potatoes, onion, and peppers, stirring occasionally for around 5 minutes until they start softening.
02 - Add garlic and crumble the ground beef into the pan. Use a wooden spoon to break it apart and cook for 5 minutes. It's okay if the beef is still pink in spots.
03 - Pour in the tomatoes, broth, and spices. Give everything a good mix and turn the heat down to let it simmer.
04 - Allow the mixture to simmer gently for 20 minutes, letting the potatoes finish cooking and soak up the flavors.
05 - Spoon the mixture onto rice or into a tortilla. Garnish with chili flakes, extra peppers, fresh lime juice, and whatever hot sauce you love most.

# Notes:

01 - Feel free to swap ground beef with chicken, pork, or turkey.
02 - Spice level is moderate but tweak it however you like.
03 - Consider adding classic add-ins like raisins, olives, almonds, or carrots.
