Cheesecake Loaf Delight (Print Version)

# Ingredients:

→ Carrots

01 - 16 small Dutch carrots or 600g regular-sized ones, cleaned and trimmed

→ Spicy Maple Sauce

02 - ¼ teaspoon black pepper
03 - ¼ teaspoon kosher salt
04 - 1½ tablespoons olive oil
05 - 2 tablespoons sriracha
06 - 3 tablespoons maple syrup

→ Crispy Chickpeas

07 - ¼ teaspoon black pepper
08 - ¼ teaspoon kosher salt
09 - ¼ teaspoon onion powder
10 - ¼ teaspoon garlic powder
11 - ½ teaspoon smoked paprika
12 - 1 tablespoon olive oil
13 - One can of chickpeas (400g), rinsed and drained

→ Extra Sauce (Optional)

14 - ½ tablespoon sriracha
15 - 1 tablespoon maple syrup

→ Lemon Garlic Yogurt Sauce

16 - ¼ teaspoon kosher salt
17 - 1 tablespoon extra virgin olive oil
18 - 1 tablespoon fresh lemon juice
19 - ½ teaspoon garlic, grated finely
20 - 1 cup plain yogurt

→ Garnishes

21 - 3 tablespoons pistachios, toasted and chopped
22 - 2 tablespoons cilantro, finely chopped

# Instructions:

01 - Turn on your oven to 425°F (200°C). Keep the racks 8 inches apart to allow proper air circulation.
02 - Spread the chickpeas on a tray, making sure they’re dry. Toss your carrots in that spicy maple sauce and lay them on a second tray. Put carrots on the top shelf and the chickpeas below.
03 - Ten minutes in, take the chickpeas out. Cover them with the seasonings and oil, then pop them back into the oven. Bake for another 20 to 25 minutes till they’re golden and crispy.
04 - Roast the carrots for half an hour, making sure to move them around at the halfway point. They should turn tender with a caramelized coating.
05 - Combine the yogurt sauce ingredients and leave it to rest for 20 minutes. If you’re using the extra sauce, just stir together sriracha and maple syrup.
06 - Spread yogurt sauce across a plate. Add the carrots right on top and include the juices from roasting. If you’ve got extra sauce, drizzle it now. Sprinkle chickpeas, cilantro, and pistachios—all done!

02 - Chickpeas hold their crunch for about 2 hours
03 - Honey works just as well as maple syrup
04 - Larger carrots can be cut lengthwise into quarters
