Maple Bacon Potatoes (Print Version)

# Ingredients:

→ Base

01 - Olive oil, 1 tablespoon (add more if needed)
02 - 2 strips bacon
03 - 3 average-sized Yukon Gold potatoes, unpeeled

→ Seasonings

04 - Minced garlic, 1-2 small cloves
05 - Generous drizzle of pure maple syrup
06 - Black pepper as you like
07 - Season with salt to your preference
08 - Sprinkle Old Bay seasoning if desired
09 - Chopped parsley to garnish

# Instructions:

01 - To make chopping simpler, chill bacon in the freezer. Cut potatoes into cubes and soak in water so they don’t turn brown.
02 - In a big skillet, heat some oil over medium-high heat. Drain the potato pieces, toss them in, season with pepper, salt, and Old Bay. Stir frequently while cooking for about 10 minutes.
03 - Toss in the diced bacon with the potatoes. Let it cook for 5-6 minutes until it’s crunchy and fat coats the potatoes.
04 - Turn the heat to medium-low and stir in garlic and parsley. Cook just one minute till the smell is rich.
05 - Pour over maple syrup and let everything caramelize for another minute. Dish out and enjoy hot, maybe topped with a fried egg.

# Notes:

01 - Swap in red-skinned potatoes if preferred
02 - You can double or triple this easily
03 - Consider extra oil if using turkey bacon
