Loaded Cheese Snack (Print Version)

# Ingredients:

01 - 1 cup black beans, rinsed after draining
02 - 14.5-ounce can Rotel tomatoes, don't drain
03 - ½ cup freshly grated pepper jack cheese
04 - 16 ounces Velveeta, chopped into cubes about an inch big
05 - ¾ cup of your favorite beer (Pale Ale works great)
06 - ½ pound regular or spicy pork sausage, casing off
07 - ¼ cup fresh cilantro, chopped up
08 - Kosher salt and black pepper, season as needed

# Instructions:

01 - Crank up the heat to medium and toss the sausage into a warm skillet. As it cooks, break it apart into bits. Sprinkle with a pinch of salt and pepper.
02 - Pour in the beer. Let it bubble for about 3-4 minutes so it cooks off just a little.
03 - Drop in Velveeta and pepper jack. Stir often until it's completely smooth, which will take around 3-5 minutes.
04 - Mix in the Rotel, black beans, and cilantro. Stir until everything's blended well.
05 - Eat it right away with some chips.
