Follow the directions on the rice package to cook. Stir in chopped cilantro and lime juice after it's done cooking.

Set a skillet to medium heat and cook the beef barbacoa for 3-5 minutes without touching it. Flip it over and cook for another 2-3 minutes until warm.

Microwave tortillas wrapped in a damp cloth for 30-60 seconds until soft, or heat them one at a time in a skillet for about 30 seconds on each side.

On each tortilla, add some rice first, then black beans, beef barbacoa, sour cream, guacamole, pico de gallo, cheese, and shredded lettuce.

Fold in the ends of the tortilla over the filling, roll tightly, and place seam-side down. Slice in half or wrap in foil to serve.
