Loaded Beef Wraps (Print Version)

# Ingredients:

→ Rice

01 - 1 lime
02 - 1/4 cup fresh cilantro, chopped
03 - 1 cup of jasmine rice

→ Burrito Base

04 - 1 cup rinsed and drained black beans
05 - 4 large flour tortillas (burrito size)
06 - 16 ounces barbacoa beef

→ Toppings

07 - 1 cup crunchy romaine lettuce, shredded
08 - 1/2 cup fresh pico de gallo
09 - 1/4 cup creamy guacamole
10 - 1/4 cup smooth sour cream
11 - 1 cup grated cheese of your choice

# Instructions:

01 - Follow the directions on the rice package to cook. Stir in chopped cilantro and lime juice after it's done cooking.
02 - Set a skillet to medium heat and cook the beef barbacoa for 3-5 minutes without touching it. Flip it over and cook for another 2-3 minutes until warm.
03 - Microwave tortillas wrapped in a damp cloth for 30-60 seconds until soft, or heat them one at a time in a skillet for about 30 seconds on each side.
04 - On each tortilla, add some rice first, then black beans, beef barbacoa, sour cream, guacamole, pico de gallo, cheese, and shredded lettuce.
05 - Fold in the ends of the tortilla over the filling, roll tightly, and place seam-side down. Slice in half or wrap in foil to serve.
