Lime Citrus Fudge (Print Version)

# Ingredients:

01 - 1/2 teaspoon of salt.
02 - 1 2/3 cups of sugar—granulated works best.
03 - 5 oz can of evaporated milk (make sure it's 2%).
04 - 12 marshmallows, cut into quarters.
05 - 2 cups of white chocolate chips.
06 - About 1/4 cup of lime zest (from roughly 5 limes).
07 - 2 tablespoons of juice from 5-7 key limes.

# Instructions:

01 - Cover an 8-inch pan with foil, then lightly coat the foil with butter.
02 - In a sturdy saucepan, heat salt, sugar, and milk over medium flame until it boils.
03 - Turn heat to medium-low, and while stirring frequently, let it simmer for about 5-6 minutes.
04 - Take off the heat. Mix in marshmallows, white chocolate, lime zest, and lime juice until blended and smooth.
05 - Spread the mixture smoothly into the pan. Let it cool off completely.
06 - Slice it into squares that are about 1-inch in size.

# Notes:

01 - You can swap key limes for regular ones.
02 - An 8-inch pan works better than a 9-inch pan for this.
03 - A double boiler isn't a must, but it can make things easier.
