Lime Cilantro Rice (Print Version)

# Ingredients:

→ Rice Layer

01 - 2 1/4 cups of water
02 - 1 clove of garlic, finely chopped
03 - 1 teaspoon of salt
04 - 1 1/2 cups of basmati rice
05 - 2 tablespoons of olive oil (extra virgin)

→ Topping Additions

06 - 3 tablespoons of fresh lime juice
07 - 1 cup of chopped cilantro (tender stems and leaves)
08 - The grated zest from a single lime

# Instructions:

01 - In a medium pot, heat up the olive oil over medium heat. Toss in rice and mix until it’s coated fully. Let it cook while stirring here and there until it starts to get a toasty color. Add the garlic and cook just a minute longer.
02 - Pour in the water along with the salt and lime zest. Crank the heat to bring it to a boil. Once it's bubbling, pop on a lid and drop it to low heat. Let it cook gently for 15 minutes. Take it off the heat and let it rest for 10 more minutes without peeking.
03 - Stir the rice with a fork to make it fluffy, then pour it into a bowl for serving. Drizzle the lime juice on top and toss in the cilantro. Stir it all together and serve while it’s still warm.
