Lemongrass Chicken (Print Version)

# Ingredients:

01 - 2 tablespoons soy sauce
02 - 1 tablespoon lime juice
03 - 1-inch piece ginger, grated
04 - 1 tablespoon honey or brown sugar
05 - 1 tablespoon vegetable oil, plus more for cooking
06 - 4 boneless, skinless chicken thighs
07 - 1 teaspoon chili flakes (optional)
08 - 4 cloves garlic, minced
09 - 2 tablespoons fish sauce
10 - 2 stalks lemongrass, finely chopped

→ For Serving

11 - 1 tablespoon toasted sesame seeds (optional)
12 - fresh cilantro for garnish
13 - salt and pepper to taste

# Instructions:

01 - In a mixing bowl, stir together ginger, minced garlic, chopped lemongrass, soy sauce, fish sauce, honey, lime juice, and chili flakes.
02 - Sprinkle salt and pepper on the chicken. Pour the marinade over your chicken in a bag or dish. Chill in the fridge for at least an hour, or leave overnight for better flavor.
03 - In a hot skillet or on the grill, cook each side of the chicken for 6-7 minutes. The inside should reach 165°F. Let it sit before cutting.
04 - Top with sesame seeds, cilantro, and lime wedges. Pair with veggies or some rice.
