Lemon Crumb Bars (Print Version)

# Ingredients:

→ Crumb Layers

01 - 1 cup regular flour
02 - 3/4 tsp salt (kosher), divided
03 - 3/4 cup brown sugar, light or dark
04 - 8 tbsp butter (unsalted), softened
05 - 1 1/4 cups rolled or quick-cooking oats
06 - 3/4 tsp baking powder

→ Lemon Mixture

07 - Juice and zest from 2 large (or 3 smaller) lemons
08 - One 14-oz can of sweetened condensed milk

# Instructions:

01 - Switch oven to 350°F. Use parchment to line an 8x8 pan, with edges hanging for easy lift.
02 - Melt butter and stir it with sugar, baking powder, and salt. Toss in oats and flour, saving 1 cup for topping.
03 - Push leftover crumb mix into the pan. Cook for 12-14 minutes until edges darken a little.
04 - Blend lemon zest, lemon juice, condensed milk, and leftover salt till it all comes together.
05 - Spread filling on crust, sprinkle reserved topping, and bake for 22-24 minutes or until the top’s golden.
06 - Let it sit and cool fully (about 90 minutes). Pop them in the fridge for half an hour for firm bars, then cut 12 pieces.
